Super easy – Super cool Meringues

MeringuesFor the people who know me they know that I die for meringues! They are soft, so sweet… I could eat 100 of them in just minutes. Unfortunately they are very hard to cook, and most of the times for they come up as a disaster.
The other day there was this picture on Facebook of a friend of mine that was making meringues with her partner. Maybe was the love and the passion they used, but the output was very┬ánice and I’ve asked her for the recipe.

This recipe is incredibly easy, but I suggest you use a kitchen aid or similar to work the eggs or you won’t have a great result.

  • 100gr egg’s whites
  • 100 gr caster sugar
  • 100 gr of icing sugar

I suggest you weight all the ingredients before you start and put them in small bowls to make it easier when you need them.

Frittata di maccheroni – Pasta’s omelette

IMG_1535This is very common recipe in the south of Italy, where I’m from. It’s usually made when you have pasta leftovers from the evening meal and you want a quick lunch for the next day ready-to-eat.

You will need:

  • 300/400 gr for pasta already cooked and cool (Any shape is fine, I love spaghetti, but in the picture I used penne)
  • 6 eggs
  • a generous pinch of salt
  • a pinch of black pepper
  • 50 gr of grated parmesan cheese
  • some olive oil to fry

Beat the eggs evenly adding the salt, the pepper and the parmesan. When blended together blend in the pasta as well and mix.
Hit a large frying pan with a small amount of olive oil and pour the mixture with pasta and eggs in it. Cover with a large lid and let it cook on a moderate fire for 5 to 10 minute...

Spaghetti Carbonara



I know I haven’t been posting for “Ever”, but my life is going through so many changing and I am really struggling to step in the kitchen and cook something special. But today, inspired by a very very nice pancetta coming from Italy and delivered straight to my door by a lovely visit we had this week, I’m going to make a great Carbonara!

Carbonara is one of the most famous italian dishes here in UK. There are so many different recipes of it. My one is with half cooked eggs, I really don’t like the repines with raw eggs!! It usually comes with pecorino cheese, but very difficult to find here in UK so today we’ll make it with Parmesan.

You will need for a dinner with 4 people:

  • 400 Gr of Spaghetti
  • 200 Gr of pancetta
  • 100 gr of grated parmesan
  • a pinch of salt and pepper
