Bake cakes it’s all about making them look nice and very appealing for the eyes. The feeling of  mouth watering when you enter a cake shop is what you are aiming when you think about bake a cake.
This different version of vanilla cupcakes screams EAT ME!!

To make 12 cupcakes you will need:

  • 175 gr Self raising flour sifted
  • 150 gr Softened salted butter
  • 150gr of caster sugar
  • 3 eggs
  • 1 teaspoon of vanilla extract

For your Icing:

  • 250 gr of softened  unsalted butter
  • 250 gr of icing sugar
  • 1 teaspoon od vanilla extract
  • Mini shortbreads
  • Chocolate chips

In this recipe you will need 12 cupcakes cases in a muffin tin and a piping bag with a large nozzle. For best results use for the icing and the cakes an electric mixer.

Coconut cookies

Coconut and chocolate cookiesWhat’s worst than Mondays? I’ll tell you what! A monday without something sweet to eat!

I like this cookies recipe because it’s easy, it’s quick and can definitely make your day!

You only have on hand:

  • 150g salted butter
  • 80g light brown muscovado sugar
  • 80g granulated sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 225g plain flour
  • ½ tsp bicarbonate of soda
  • ¼ tsp salt
  • 100g of milk chocolate chips
  • 100 gr of grated dried coconut
  • 1 tablespoon of warm milk

Preheat the oven at 180 degrees.

Mix together butter and the two sugars until all together. If your butter is cold, it may be a bit crumbly now, but it’s ok. Add the egg, the vanilla, salt and bicarbonate and mix to incorporate everything.

I must start sounding a bit repetitive, but guys, who can resist Oreo?
This week I have a special friend visiting from Italy. She loves baking as well, she’s been a finalist in the first season of the Great British bake off in Italy.
I can just tell that this week is being a new recipe every 10 minutes.
For this one I started from a very much loved recipe of a blueberry cheesecake and 3 packets of Oreo double stuff!

For the base

  • 125 gr of Oreo biscuits (just the biscuits, separate the cream you’ll need it for the cake)
  • 75 gr of salted butter
  • 1 tablespoon of sugar

For the cake

  • 250 gr of spreadable cheese (Philadelphia is the best)
  • 2 eggs at room temperature
  • The remaining cream from the Oreos
  • 50 ml of double cream

  • 50 gr of double cream
