Fruit cake (Light version) (not very light, but sounds cool!)

Christmas is just gone, but I don’t understand why we should have something we love just for a few months in a year! Let’s have this winter warmer every time we need it!
My version is a bit lighter than the usual recipe that is more fatty, we do have to keep a good balance!

To bake this cake you will need:

  • 225 gr of plain flour
  • 1/2 spoon of bicarbonate of soda
  • 1/2 mixed spices
  • 175 of salted butter
  • 175 gr of zucchero
  • 2 eggs
  • 1 orange
  • 1 cooking apple
  • 200 of raisins
  • 100 sultanas
  • 100 gr of  crushed walnut
  • 50 gr of glace cherries

For the topping:

  • 60 gr of soft cheese (Philadelphia style)
  • 25 gr of butter
  • 60 gr of icing sugar
  • 50 gr of crushed walnuts
