Ingredients for 4 people:
500 gr of Paccheri pasta (Garofalo brand makes fantastic quality)
2 Lobsters (In here I go for Frozen, it’s very hard and expensive to buy fresh ones in the UK!!)
2 cans of cherry tomatoes
1 Glass of white wine
2 cloves of garlic
Good quality olive oil
salt and pepper to taste
In a large and deep sauce pan fill the bottom of the pan with a small layer of olive oil and shallow fry the garlic cloves that you have cleaned from the outer skin and slightly crushed with the flat of the knife. Make sure the Garlic start smelling amazing and reach a golden colour before you add the cherry tomatoes. Add salt and pepper to taste.
Stir a bit and let settle for a few minutes before you add the white wine. Now the sauce will have to cook for 10/15 minutes.
In the meanwhile put a pasta pan on the hobs full of water with a handful of salt and what for it to boil.
While you are waiting put your lobsters on a chopping board and with a sharp knife cut them in 2 identical halves.
Once your cherry tomatoes have become a glorious sauce, make sure you can see only the peels of the tomato and the texture is glossy and not watery, add your lobsters and incorporate with the sauce. Let it cook for further 5 minutes and then cover and take it off the fire.
Cook your pasta according to instruction on the bag, make sure you take it out of the water at Al Dente cooking.
Put one half lobster for each of the 4 serving plates and put the sauce back on a moderate fire, add the pasta that you have completely drained of the water and incorporate being careful not to break the past with your wooden spoon.
Divide equally on the four plates and enjoy with your friends… a few glasses of white wine will pair this plate in a fantastic way.
