Spaghetti Carbonara


I know I haven’t been posting for “Ever”, but my life is going through so many changing and I am really struggling to step in the kitchen and cook something special. But today, inspired by a very very nice pancetta coming from Italy and delivered straight to my door by a lovely visit we had this week, I’m going to make a great Carbonara!

Carbonara is one of the most famous italian dishes here in UK. There are so many different recipes of it. My one is with half cooked eggs, I really don’t like the repines with raw eggs!! It usually comes with pecorino cheese, but very difficult to find here in UK so today we’ll make it with Parmesan.

You will need for a dinner with 4 people:

  • 400 Gr of Spaghetti
  • 200 Gr of pancetta
  • 100 gr of grated parmesan
  • a pinch of salt and pepper
  • 2 egg’s yolks and 2 whole eggs

Put on a pasta pan with seasoned water and wait until boils. Then add the pasta and wait for the cooking time.
Meanwhile, beat your eggs, all of them, with the parmesan, salt and pepper. In a large frying pan with a very small amount of olive oil cook your pancetta on a slow fire until is brown and crispy. Take the pan away from the fire and while is still hot put in the mixture with the eggs and mix it until it set.
At this point your pasta should be ready, drain the water and put the pasta in the eggs. Put everything back on the fire and stir-fry for a few minutes until everything is mixed nicely and you are happy with the result.

Serve it straight away and…
