This is a typical sunday italian lunch. This recipe very famous in the both of Italy comes from tuscany and it is a must have in your italian recipe book.

Although your shopping list is pretty large today it’s not a very expensive recipe, let’s see what you need!

  • a whole chicken copped in pieces but still with the skin on
  • 1 onion  chopped
  • 2 carrots chopped
  • 3 celery sticks chopped
  • 1 garlic clove
  • 1/2 glass of olive oil
  • 1 glass of red wine (yes please!)
  • 400 gr of chopped tomatoes in tin
  • 1 sprinkle of pepper and salt
  • a few bits of rosemary
  • a few leaves of parsley

In large frying pan, large enough to contain all your ingredients, heat the oil and when hot stir fry your chicken on a medium heat for 10 min both sides. Now add the onion, carrots, celery garlic your salt and pepper with the rosemary and keep stir frying for 5 minutes. When everything is nicely coloured add your wine and let it evaporate. At this point add your tomatoes and cover cooking for 30 minutes.

After this time make sure your chicken is well cooked and soft and add your parsley.

I love it with a side of baked potatoes… It’s sunday now! 🙂
