Let’s say it straight whenever in Italy you haven’t got much time to cook the question of your partner would always be “let’s make a pasta” and it’s not going to be any pasta, but it’s going to be Pasta al pomodoro!!
So if you are looking for the very taste of Italy, follow me in this recipe and you won’t regret it!
For 4 generous portions:
- 400 gr of Pennette pasta
- 500 gr chopped tomatos (The tin!) In alternative you can use a tin of cherry tomatoes
- 2 cloves of garlic
- 30 gr of olive oil
- Parmesan to sprinkle on top
First of all fill your pasta pan with water and add a handful of salt, put it on a high fire and wait until it boils.
While you are waiting put a sauce pan on a medium fire with the olive oil, a and the garlic. When the garlic start to burn remove the pan from the fire and the garlic from the pan. Being very careful to the spray of oil pour in your tomatoes and put it back on the fire covered until it stops spraying. Add to it half glass full of water and a pinch of salt and cover and let it cook for 15/20 min on a small fire. Stir every now and then.
When you have 10 min missing on the timer trow the pasta in BOILING water and wait the time on the packet to drain it. I always suggest to consider the time “al dente”. I don’t know why in England people use to cook pasta too much.
At this point add the pasta to sauce and stir. Wait a couple of minutes and take it off the fire.
Serve it with parmesan… amazing!
