Pane alle Noci – Walnuts bread!

Pane alle noci

Pane alle noci

Every time  an English person goes to an Italian Restaurant orders bread! That’s correct! The bread it’s a very important thing to have on a table for an Italian. If you have pasta, If you have a saucy chicken of even if you have a slice of Pane and nutella, it can make your day.
I’ve started experimenting with bread quite late in my kitchen experience, but I come out with the recipe of this bread with walnuts that I’m pretty sure you won’t be able to leave without it anymore after you had the first slice! So, let’s go to bake!

You need:

  • 300 gr of warm water
  • 50 gr of olive oil
  • 8 gr of salt
  • 15 gr of fresh yeast
  • 1 teaspoon of sugar
  • 250 gr of plain flour
  • 250 gr of strong bread flour
  • 100 gr of walnuts pieces

In a large bowl put both your flours in and dig a hole in the centre. In this hole put a small amount from your water and melt in it the yeast with the sugar. In the remaining water dissolve the salt and the oil, and when you are ready to get your hands dirty start to add the mixed water to the flour and start kneading. When it starts to look like a dough put it on a working surface and keep kneading for at least 5 minutes. At last add your walnut pieces and knead it again for a minute.

Dust your bowl with some other flour and make a ball from your dough and place it in the bowl. It has to rise for at least 2 hours in a warm place in your house and covered with some cling film. When the dough has doubled his size knead it again and place it on a baking tray with some baking paper on. It now need another hour rising. After this time do 3 cuts on the surface of the ball. It’ll give you the crunchiness on the top when it’s cooking.
It now has to cook for 45-50 minutes in a preheated oven at 200 degrees. Take it out the oven when your bread it’s nicely golden.

Buon appetito
