I must say it now! I love blue cheese, I couldn’t live without it! For this recipe I usually use the spreadable one… one bit of this crepes and it’ll be on your weekly diet!
Let’s what you need:
- 40 gr of salted butter (+some more to cook your crepes)
- 250 gr of plain flour
- 1/2 litter of milk
- 1 pinch of salt
- 3 eggs at room temp
- spreadable blue cheese
- ham slices
- a sprinkle go grated parmesan
Beat your eggs until they are fluffy and add to them the milk, the flour and the salt. Once mixed throughly let it set in the fridge for 30 minutes.
Melt the butter and add it to your mixture after the 30 minutes are gone and start heat a small flat frying pan, the ideal one is the one is the one for the pancakes.
Add a very small amount of butter and spread it to the surface of the pan. Start cooking your crepes at small amount at time. The ideal amount is about three tablespoon at time, but it depends on how big is your pan. Add the mixture to the pan, move the pan to let it go to the edges. Keep move the edges in order to don’t let the mixture stick to the pan. Turn it the other way when you are happy about the color on the bottom side, it won’t be long. And cook the same way on the other side.
Keep going until you finish your mixture.
Spread each cream half side with the blue cheese and add a slice of ham. Then fold it in two and then in four.
Put all your lovely crepes on a baking tray and prickle them with some parmesan and a half teaspoon on each crepe. Bake them for 10 min at 200 degrees 10 min before serving them.
