Coconut cookies

Coconut and chocolate cookiesWhat’s worst than Mondays? I’ll tell you what! A monday without something sweet to eat!

I like this cookies recipe because it’s easy, it’s quick and can definitely make your day!

You only have on hand:

  • 150g salted butter
  • 80g light brown muscovado sugar
  • 80g granulated sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 225g plain flour
  • ½ tsp bicarbonate of soda
  • ¼ tsp salt
  • 100g of milk chocolate chips
  • 100 gr of grated dried coconut
  • 1 tablespoon of warm milk

Preheat the oven at 180 degrees.

Mix together butter and the two sugars until all together. If your butter is cold, it may be a bit crumbly now, but it’s ok. Add the egg, the vanilla, salt and bicarbonate and mix to incorporate everything.
It’s now the time to add the flour, the choc chips and the coconut. If you find it hard to mix together add the spoon of milk. Mix until the mixture is uniform.
Spoon your very soft dough on 2 baking trays with some baking paper on. You need to divide in 12 parts and each part have to be largely separated form the others.
Don’t worry too much about the shape while cooking they’ll spread on the baking tray.
Bake them for 10 min, they’ll be ready when the edge will be crunchy and the centre still soft.
Let them cool for ten minutes and them place them on a cooling rack until completely cool.
