I must admit, it’s not the most italian recipe, but for me muffins make me feel that senso of “home” that in this very cold cold winter we need!
Serve this muffins with a hot chocolate and your friends will be overwhelmed!
In your shopping list:
- 250gr of plain flour
- 250ml of whole milk
- 175gr of caster sugar
- 150gr of chocolate chips
- 2 tablespoon of dark chocolate powder
- 2 teaspoons of baking powder
- 1/2 teaspoon of bicarbonate of soda
- 90 ml of olive oil
- 1 egg
- 1 teaspoon of vanilla extract
You need your oven hot around 160 degrees.
In a large bowl mix together cocoa powder, sugar, baking powder, bicarbonate and the chocolate chips.
In a second bowl mix together milk, olive oil and the egg. When your mixture is nice and smooth add it to your firs bowl and mix it to your first bowl until it’s all mixed together.
Fill your muffins cases in a muffin tin with the mixture and add some more chocolate chips on top.
Bake them for 20 minutes or at least until nice dark and puffy. Let them cool and serve!
