Savoiardi are soft cookies, also known as finger lady. They are mostly used to make the most loved Tiramisú cake, but I usually serve them at the end of a great dinner with some nice custard or chocolate cream.
To bake an average of 25-30 pieces you will need:
- 2 eggs
- 62 gr of sugar
- 62 gr of flour
- A pinch of salt
- Caster sugar and icing sugar as decoration
Preheat the oven at 200 degrees.
First of all for this recipe you will need to beat the eggs white until very very very stiff. It’s pretty much the base of all the recipe. The stiffer the white will be the best the recipe will come out. Use the pinch of salt to help you have your eggs white more stiff.
Beat the yolks on side and add them to the white and THIS IS VERY IMPORTANT mix them with a plastic spatula or a wooden spoon from the bottom to the top very slowly.
With the same method add the flour sifted and the sugar.
Once everything is incorporated put into a piping bag with a plain round nozzle and pipe on a tray covered with some backing paper. You need to pipe your cookies long and large as if it were your finger. Sprinkle all your cookies with some caster sugar, half spoon for each biscuit should do the trick!
Bake them for 5 minutes. After this time open the oven to check how are they coming out and to let a bit of air in the open that will help to dry them out. Give them a couple more minutes and take them out when the surface is nice and golden.
Allow them to cool and when ready place them on a serving plate sprinkled with some icing sugar.
