Oreo Cupcakes

8404_240091132803772_2039053713_nHow can you make Oreos cookies taste even better than they already are?! Obviously, make a cake with them!!!
One day I was having one or two (20/30) cookies while I was baking some cupcakes for a customer and the smell of the cupcakes in the oven mixed with the taste of the cookies made me have this great idea.

For 12 cupcakes you will need:

  • 2 cups of self raising flour
  • 1/2 teaspoon of bicarbonate of soda
  • 1/4 teaspoon of salt
  • 120 gr of  salted butter
  • 1 cup and 3/4 of sugar
  • 1 teaspoon of vanilla extract
  • 4 large eggs
  • 1 and a half  cups of milk
  • 1 and a half cups of Oreos


  • 250 gr of butter
  • 250 gr of icing sugar
  • 1 teaspoon of vanilla
  • 1 other cup of crushed(very very finely or they’ll stick in the nozzle) Oreos = 12 for decoration

The funny part: Separate 12 Oreos and save 12 parts without the cream, DO NOT eat them and save them for later. Put the remaining cookies in the blender and crush them very finely. Saving the Oreos for the frosting and Eat what you don’t need, you deserve it!
Preheat the oven at 180 degrees.
Cream the eggs with the sugar and when it’s light and fluffy add the crushed Oreos(the ones for the cakes), the vanilla and the butter and keep beating until the mixture looks uniform.
Add the milk, the flour, the bicarbonate, the salt all at one and start beating for at least 5/10 minutes. Every 2 o 3 minutes stop it and add a bit of milk until you ran out the amount you have to use.
Spoon you mixture into 12 cupcakes cases where you have placed the 12 half Oreos saved at the beginning of the recipe use a muffin tin to keep them in shape and bake them for 25/30 min until they are well cooked but still soft. To check if your cakes are ready pierce them with a knife in the middle and if the knife comes out dry your cakes are ready, otherwise give them a bit more time.IMG_1458

While they are cooling get your frosting ready. Cream the butter and add the icing sugar in small portions until the cream is soft and light. At this point add all the vanilla and at small parts again the oreos and the milk until the cream looks homogeneous.
Put the icing in a piping bag with the largest nozzle you can find and pipe it on you cupcake that it have to be completely cooled down.
Pipe it from the outside to the inside with a circular movement and then place a whole oreo, or half on top as a decoration.
