Muffins cheddar and chives


Come on, let’s tell the truth sometimes we just need something to indulge!
I made this muffins for the first for a party I loved them so much that I had to make them every week from then for my partner, he loves them!!!

You need:

  • 500 gr of plain flour
  • 1 cup of warm water
  • 1/2 cup of milk
  • 25 gr of fresh yeast
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • a pinch of pepper
  • 2 tablespoon of olive oil
  • 1 tablespoon of chive
  • 3 tablespoon of grated cheddar
  • 1 egg yolk

In a large bowl put your flour and dig a hole in the middle. In your hole place the warm water and melt the yeast with the sugar. Add the milk, salt and pepper and start kneading with your finger adding after a while the milk and the oil.
Once your dough is done enough take it on the kitchen surface and knead it for at least 10 min. Add the chive and the cheddar to your dough and leave it in a warm place to rise for at least 1 hour.
After this time knead your dough again and divide it in 12 pieces and place it in a greased muffin tin. Leave the dough raise again for another hour.
Bake them in a preheated oven at 200 degrees after brush your yolk and the surfaces for 25/30 min. They’ll be ready when they’ll have a bread consistency.

I love them most when they first come out the oven or if you do them in advance give them a heat in the microwave before serving!
