Fruit cake (Light version) (not very light, but sounds cool!)

Christmas is just gone, but I don’t understand why we should have something we love just for a few months in a year! Let’s have this winter warmer every time we need it!
My version is a bit lighter than the usual recipe that is more fatty, we do have to keep a good balance!

To bake this cake you will need:

  • 225 gr of plain flour
  • 1/2 spoon of bicarbonate of soda
  • 1/2 mixed spices
  • 175 of salted butter
  • 175 gr of zucchero
  • 2 eggs
  • 1 orange
  • 1 cooking apple
  • 200 of raisins
  • 100 sultanas
  • 100 gr of  crushed walnut
  • 50 gr of glace cherries

For the topping:

  • 60 gr of soft cheese (Philadelphia style)
  • 25 gr of butter
  • 60 gr of icing sugar
  • 50 gr of crushed walnuts

Preheat the oven at 180 degrees.
Sift the flour in a large bowl and add to it the mixed spices (I love the smell) and the bicarbonate of soda. In another bowl  or in your Kitchen aid beat together the butter and the sugar. Add to it the eggs one at time, together with a spoonful of flour until you have incorporated everything. Grate the orange and the apple and add it to the mixture with the walnuts, the sultanas and the raisins, mix it with a wooden spoon and pour it into a tin big enough to contain the cake. Take in consideration that the cake doesn’t raise a lot.
Place your Cherries on top as decoration, they are going to release that heavenly syrup while cooking. Bake it for 75/90 minutes in the middle shelf of your oven. To cheek if it’s done pierce it with a knife in the middle and take the cake out when the knife comes out dry.

To do your frosting simply mix together the butter the soft cheese and the icing sugar. Spread it on your cooled cake and sprinkle it with the remaining walnuts! very very tasty.
