Right after Christmas everyone start thinking about diet, gym an healthy lifestyle. I totally agree with that, but when it comes to cook some tasty dishes we can make them taste great, but save on calories!
To start your diet with a nice kick you will need, this recipe is for two, but you can double it up if you have fiends for dinner:

  • 1 whole chicken breast cut in 4 pieces
  • 2 tablespoon of olive oil
  • salt and pepper for seasoning
  • 1 mozzarella ball
  • 4 spoonful of ready made pesto

In my picture I had my chicken with some potatoes wedges, who said they are just good for breakfast!?

You will need a large pan with a lid. Put your olive oil in the pan and heat it with salt and pepper. When quite hot add your chicken breast and 2 tablespoon of water and cover place the lid on and reduce the heat to minimum. Cook until the chicken is completely white and if you try to cut it’s cooked inside as well. Take the lid off and increase the power of the fire put a slice of mozzarella cheese on each chicken breast and cook until it starts melting. Put on a nice plate and add your spoon of pesto as seasoning.

Serve it piping hot and enjoy!
